
The above knives are all forged-to-shape from 1095 high carbon steel. They exhibit etched surfaces to reveal a gently undulating differential hardness that is called a gunome hamon. This is a decorative and functional clay treatment process known in Japan as honyaki. This style of heat treatment gives the result of a soft supportive spine with a keen, long lasting edge; strong and resilient blades are the result.
A balance of serviceability and toughness is required in a kitchen knife. The skill and attention to design, edge geometry and workmanship on each knife in union with a differential heat treatment process results in this balance. These hand made knives are heirloom quality and daily workers all in one beautiful creation.
